For scorpions it is a divine dessert meant for the Gods and cooked for special people and special occasions. Jackfruit, which is eaten as a fruit in the south and cooked as a vegetable in the north, is delicious and soft.
Just like Scorpions, it is tender inside but hard to peel. This month’s dish is Ammama’s Chakka Pradhamam . All Scorpions out there, have it and see the difference in energy levels.
Chakka Pradhamam (Jackfruit kheer or payasam)
Ammamma’s Chakka Pradhaman
Recipe Preparation Time: 35 minutes
Cooking time: 30 minutes
Serves: 5-6
Ingredients:
2 cup packed chakka chola /ripe jackfruit flesh : 30-40 flesh (de-seeded) or canned jackfruit : 2 tins/500 gms each
Jaggery : 5-6 blocks /500 gms
Thin coconut milk, third extract /monnampal : 1 cup
Semi-thick coconut milk, second extract /randaampal : 1 cup
Thick coconut milk, first extract /onnampaal : 1/2 cup
Cardamom powder: 1/4 tsp
Dry ginger powder: 1/4 tsp
Cumin powder: 1/4 tsp
Coconut Pieces (cut into very small bits): 1 tbsp
Cashew nuts: 10-15 nos, broken into pieces
Raisins /Unakka Mundhiri: few pieces
Ghee: 6 tbsp or as required
Method:
- Grind the jackfruit flesh with 1 cup of thin thick coconut milk.
- Add cardamom powder, dry ginger powder and a little cumin powder.
- Place an urli (round copper or bronze bottom vessel from Kerala) on the fire. If you can arrange firewood, it would be ideal.
- Pour two tablespoons of ghee in the urli, add the ground mixture of jackfruit and coconut milk.
- Add the semi thick coconut milk.
- Keep stirring over slow fire for 15 minutes.
- Now add more ghee and half of the thick coconut milk.
- Keep stirring and add the jaggery. Stir for 10 minutes, till it starts leaving the side.
- Add rest of the ghee and the remaining thick coconut milk.
- Keep stirring another 3 minutes.
- Pour the chakka pradaman into a nice bowl. Garnish it with ghee- fried cashew nuts, coconut pieces and raisins.
