One of the organisers of the festival, Dhaval Chandrana, who runs Earth Story, a vegan lifestyle store, says, “This is the third time we are organising a vegan festival. But unlike the previous two editions, this event will be on a bigger scale. We are planning to put up around 42 stalls with vegan products from different parts of the country. Apart from this, Entree restaurant (inside the mall) will be serving vegan food for those two days. Well-known chefs Neelima Sriram (Chennai) and Samyuktha Karthik (Bengaluru), will be curating the vegan buffet. Body transformation specialist Roshni Sanghvi will be holding a workshop on Sunday where she guides the participants to make their own plant-based meal plan.”
Chef, food stylist and food consultant Neelima has been closely associated with Dr Nandita, who is known for reversing lifestyle diseases through a plant-based diet. “For this vegan festival, I’ve curated a few recipes which are completely whole food (no oil and sugar) and the rest is vegan recipe. I’ve been organising vegan cooking classes in the city and the number of people turning vegan is increasing day by day. They are realising that it’s a sustainable diet. When people say they cannot live without consuming curd rice for a week, I show them the alternatives with peanut curd, cashew curd, almond curd, soyamilk curd and so on,” she says.
