Cooking with leftovers: Make delicious upma with veggies, meat
EVERYONE is busy, stressed out and tired at the end of a long day. At times, one might not feel like cooking or sudden guests drop in or simply you might have too many leftovers in the fridge, which you do not want to waste. I will help you to create new dishes with leftovers every week.

Bread Upma (Serves 2 to 3)
INGREDIENTS
Left over slices of bread: a medium bowl full, even leftover toast can be used
Leftover cooked vegetable/ chicken/ meat/ pasta/ or any dry dish. Semi gravy dish can be added but no gravies
Some diced onions
2 tablespoons: oil/ ghee/ butter (your choice). I use ghee to give a nice flavour. Cooking in ghee is prescribed in Ayurveda.
1 teaspoon: mustard seeds
1 spoon: cumin seeds
A pinch: asafoetida
Two red chilies
A sprig of curry leaves
Salt to taste
METHOD
Place a saucepan over fire and add oil. When oil is hot, add mustard seeds and when it splutters, add the red chilies, cumin seeds and onions. Fry them.
Add the bowl of bread pieces and fry.
Add whatever leftovers you want. Do not add any gravy.
Toss it all together till the bread is nice and roasted along with the leftovers.
Add salt only if needed, as the left overs will have salt. Remove and serve hot.
TIP OF THE WEEK
Place a slice of lemon in your pressure cooker at the bottom, while cooking in it. The lemon cleans up all the surface dirt and leaves a shining bright interior.
