WATERMELON SALSA IN TACOS
INGREDIENTS
- Watermelon, seeds removed: 2 cups
- Cucumber, peeled and seeded: 1/2 cup
- Onion, chopped: 1/4 cup
- Red bell pepper, chopped: 1/4 cup
- Yellow bell pepper, chopped: 1/4 cup
- Jalapeño peppers, diced: 1 tbsp
- Fresh cilantro, chopped: 1/4 cup
- Honey: 1 tsp
- Lime juice: 2 tsp
WATERMELON CHERRY TOMATO SKEWERS
INGREDIENTS
- Watermelon, seedless, cubed Cherry tomatoes, halved Coriander leaves
- Olive oil: 1 tsp
- Lime Juice: 1 tsp
- Sugar: 1/4 tsp
- Salt as required
- Toothpicks
METHOD
- Assemble the skewers by pushing half tomato, coriander leaf, watermelon cube, then the other half tomato.
- Continue for all the skewers.
- Drizzle olive oil, salt and sugar mixed with lime juice syrup and serve chilled.

WATERMELON AND PRAWN COCKTAIL
INGREDIENTS
- Large prawns: 750 gm
- Medium-sized watermelon: 1
- Cucumber: 2 Iceberg or romaine lettuce
FOR DRESSING
- Salt: 1 tsp
- Sugar: 1 tsp
- White pepper: ½ tsp
- Mustard paste: 1 tsp
- White vinegar: 2 tbsp
- Olive oil: ¼ cup
FOR COCKTAIL SAUCE
- Mayonnaise: 350 ml
- Juice of 1 lemon
- Tomato sauce: 6 tbsp
- Worcestershire sauce: 2 tbsp
- Paprika: 1 tsp
- Tabasco sauce: 1 to 2 tsp
- Fresh cream: 100 ml
- Salt to taste
METHOD
- Cook prawns with shells in boiling salted water for about 5-6 minutes. When cool, remove shell and black vein. Keep aside.
- Scoop melon into balls, remove the seeds.
- Peel and cut cucumbers into ½ inch dices, discarding the core.
- Toss dressing through melon and cucumber. Place in a colander to drain. Chill well. Mix together all the ingredients of the cocktail sauce.
- Mix the prawns, watermelon balls and cucumber. Check seasoning.
- Line 6 glasses with lettuce leaves and fill with the cold cocktail.
- Serve chilled.
TANGY WATERMELON PUNCH
INGREDIENTS
- Watermelon juice: 6 cups
- Sprite: 400 ml
- Orange juice: 200 ml
- Lime juice: ¼ cup
- Ginger juice: 2 tbsp
- Ice cubes
- Mint leaves and lime slices for garnishing
METHOD
- Combine all the ingredients in a jar and mix gently with a spoon.
- Spoon into punch cups and serve with mint leaves and lemon wedges.
