INGREDIENTS
2 onion finely chopped
6 tomatoes chopped
1/2 cup boiled mashed potatoes
3 tbsp oil
Salt as per taste
1/2 tsp turmeric powder
1 tsp red chilli powder
3 tsp sugar
Some chopped coriander
3 eggs
METHOD
Saute the onions in oil till translucent.
Add turmeric, chilli powder, tomatoes, salt and sugar. Cook till they are soft.
Add boiled mashed potatoes and coriander.
Make 3 dents in the tomato base and crack the eggs in one each.
Cover and let it cook through. Serve hot with roti or toast
