Andhra chilli chicken recipe


INGREDIENTS
Chicken - 1/2 kilo (washed)
Green chillies - 14 long or 18 small
Ginger garlic paste - 4 tsp
Coconut oil - 8 spoons
Onions - 2 medium-sized, finely chopped
Coriander leaves - half ahandful, finely chopped
Turmeric - 1/2 tsp
Cornflour - 2 tsp
Water - 150 ml

FOR MARINATION:
In a blender, add green chillies, 3 tsp of ginger garlic paste, coriander leaves chopped and water and make it into a paste.

Marinate the washed chicken with the paste and keep aside for 20 minutes.

PREPARATION

Place a pressure cooker on the stove and keep in medium flame.

Add 6 spoons of coconut oil

Once the oil is warm, add finely chopped onions and fry in medium flame till golden brown

Now add the marinated chicken and keep frying for about 10 mins

Add a pinch of turmeric and salt to taste

Add in half cup water (150 ml)

Stir it well and close the pressure cooker lid with the weight on

Cook for 5 to 6 whistles on high flame or 25 mins on medium flame

Switch off the stove

Once the cooker has cooled down, remove the lid and switch on the stove again and place it in high flame while stirring

Mix 2 tsp of cornflour with 4 tsp of water and add this to the cooker

Add 2 tsp of coconut oil again to the cooker and stir for 5 minutes till you get a semi gravy consistency

Garnish with coriander leaves and a dash of lemon juice (optional) Serve with steamed rice or rotis
