    JACKFRUIT KEBAB

    METHOD

    Separate the raw jackfruit pods from the ripe fruit and remove the seeds

    Cut the jackfruit pods into medium size pieces and place inside a pressure cooker with 100 ml of

    water for 3 whistles.

    When the pressure releases from the cooker, strain excess water and allow it to cool.

    Mash cooked raw jackfruit pieces using a masher or fingertips.

    Roast gram flour till aromatic

    Add chopped onions, chopped chilli, chopped ginger, turmeric, coriander powder, jeera powder,

    garam masala powder, red chilli powder, roasted gram flour and salt to taste.

    To the mixture, add mashed jackfruit, raw mango powder and coriander leaves.

    Mix properly to make a dough and divide to make small kebabs

    The kebabs can either be deep fried or shallow fried

    Serve with mint chutney

    INGREDIENTS

    Raw jackfruit: 250 gms

    Besan gram flour: 120 gms

    Onion: 60 gms

    Ginger: 5 gms

    Green chilli: 5 gms

    Coriander leaves: 10 gms

    Turmeric: 5 gms

    Red chilli powder: 5 gms

    Cumin powder: 5 gms

    Coriander powder: 5 gms

    Garam masala: 5 gms

    Raw mango powder: 5 gms

    Salt: To taste

    JACKFRUIT HALWA
    METHOD
    Separate jackfruit pods from the ripe fruit and remove the seeds
    Chop the jackfruit into small pieces and grind to make a puree
    Boil jaggery separately and strain
    Heat a kadhai and add ghee. Sauté chopped jackfruit on low flame till the mixture starts boiling
    Add boiled jaggery and cook on low flame with continuous stirring
    Add cardamom powder and cook till it becomes thick and starts leaving the bottom and the sides
    Garnish with roasted cashewnut
    INGREDIENTS
    Jackfruit pods: 500 gms
    Jaggery: 250 gms
    Cardamom powder: 5 gms
    Cashewnut: 20 gms
    Ghee: 30 gms
